Chocolate Almond Brownies Ingredients -Almond flour – 2 cups / 200 gms -Cocoa powder – ½cup / 40 gms -Butter – 125 gms -Chocolate – 125 gms -Dates purée- 1 cup / 250 gms -Eggs – 4 -Baking powder – 1tsp -Vanilla – 1tsp -Pecan Nuts/ Walnuts – ¾ cup / 90 gms -Caramel Sauce (chilled & hardened) – ½ cup Method -Preheat the oven to 170°c. -In a mixing bowl, the butter & chocolate & melt them together by using the double boiler method. (or in short bursts in the microwave) -Line a baking tray with a parchment paper -Sieve the almond flour & cocoa powder together, add the baking powder & keep aside. Now start the process of making the batter: -In the melted chocolate, add the dates purée & beat well with the help of a spatula. – Add the eggs one by one while mixing them in constantly with the spatula. -Then fold the flour into the batter in 3-4 parts. -Finally, fold in the chopped pecan Nuts. -Now pour half the batter into the baking tray & spread it to cover the base. -Then make balls out of the caramel & place them on the layer of the batter. Then pour the rest of the batter over it to cover completely. -Bake for 12-15min at 170°c It should be slightly fishy and gooey so do not over bake. Once done allow it to cool on a cooling rack. -When they come to room temperature, chill them in the refrigerator and cut them into squares. serve with a drizzle of caramel sauce. Chicken Popcorn Ingredients -Chicken cubes (1 inch) – 250 gms -Cajun spice – 2 tbsp -Salt – 1tsp -Egg – 1 -Crushed cornflakes – 1cup -Oil – for deep frying Method -Marinate the chicken with Cajun spice & salt & leave it for 2-3 hours. – Before frying, add an egg to the marinated chicken & mix well. Coat with crushed corn flakes and put them into the hot oil to fry immediately. Should take 2-3 minutes on a medium flame to cook and turn golden & crispy. Remove on absorbent paper. -Serve hot with mayo or sauce of choice. Brownie platter @renagermany Outfit @ensembleindia @notebook.official
